Is Weight Training really useful? Why didn't they focused on strength training instead of just doing calisthenics and cardio?

They are training with increased gravity.

Imagine if with every push up you were trying to lift a 100 times heavier body.

they need endurance to fight, which is about the extent of the logic in dbz. dbz had me believe you could do 100 curls of any weight and eventually get shredded arms.

plus it's a cartoon. someone slowly work their way up doing slightly heavier versions of the same 3 sets of 8 reps of the same few exercises every other day and scrutinizing their nutrition and sleep and making sure to get adequate rest looks a lot less impressive (and is less of what the audience would expect) than training every single day with super impressive bodyweight exercises at really high reps (which the audience doesn't know isn't actually related to high strength)

Well, Vegeta didn't have rest days, and that's kinda the canon reason he's lacking behind. Not exactly, but because he goes HAM all the time, while Goku is chill.

dbz logic doesnt have several stats like endurance or strength.
You only have one stat and that is powerlevel, and your training increases your powerlevel, no matter if you do cardio or weightlifting

Yes, they do actually. Characters are often stronger but sluggish and more easily tired, or fast as fuck, etc.
They are literally training heavy weight & endurance at the same time with high reps + high weight.
