No it's not close to excessive. Once you're pushing relatively heavy weights you'll need 5+ minutes rest. I usually take 5 max because my gym is crowded but usually on the last set I take longer to make sure I don't fail it.

You add one minute per set.
So 5, 6, 7, 8 minute rests for squats.
9, 10, 11, 12 for OHP.
13, 14, 15, 16 for rows because at this point you're tired as fuck.
Feel free to take a 15 minute rest before your DL workset. You really don't want to go into a DL without being prepared.
