Depends on the situation. The basic is to just disarm them going into a wrist lock. It's a lot easier than you'd think. Most people have literally no idea what they're doing in a fight, especially the guys who go straight to using a weapon.

I've also used hits with bottles/pool cues, swift kicks to the nuts, that sort of thing.

My favorite was a time when a guy pulled out a knife and before I even had a chance to do anything one of the bartenders had grabbed a stool and flung it across the room into the guy, knocking him out.
