Am I over training? Iv been doing SL 5x5 for 8 months and just recently hit 225lbs squat.
My other lifts are
275lbs dead
115 ohp
170 bench
190 row
In pic related is what I do after I do my SL routine. I do these to not have t-Rex action

This isn't even close to overtraining.

Why are my squats slacking so hard or is it just me? I had to deload 3-4 times simply cause of form issues cause it got too heavy

Not even close.
Over-training is far, far harder then people yap about.
I would recommend training as hard as you possibly can without worrying about over-training. If it happens (which it most likely won't) then just recover and then you will know your actual limit.

Fatigue is not the same thing as overtraining. If you're questioning whether or not you're overtrained, you're not.

I just find 225lbs after 8 months of SL a low number. I can't even do them with proper form so I might have to deload AGAIN

SL is just a beginner routine dude. Once your lifts are okay (you kind of know what you are doing) then just swap to something else. You don't need to do 5x5 forever.
Change your 5x5 to 3x8/6/5 to go heavier for your compound lifts.
You could even find a routine similar if you want to.
