If your gym has training plates (5kg or 10kg, usually they'll be bumper plates), use those to establish form. If not, lift off blocks - it's very difficult to get the right starting position if you aren't lifting from a dead stop at the proper height.
As with all lifts, start light (empty bar or 5kg training plates if available), do a few sets of 5 to establish form, then add 10kg. Do a set of 5, if your form is still good, add maybe another 10kg. If you can still do that without your form breaking down or your bar speed slowing down dramatically, add 5kg. And so on till your form/speed starts to break down. That's your starting work-weight.
