the bar doesn't have any numbers on it because the weight is negligible, but the plates say 25 lbs because they're 25 lbs. so you would be lifting 25 lbs + 25 lbs = 50 lbs

You're actually lifting 0 lbs because equal mass (25lbs) on either side of the bar balances the system and they cancel each other out.
