When cooking chicken breast, try cutting them width-wise to make them less thick. This not only decreases cooking time, but also prevents the outside becoming overcooked while barely cooking the inside (chicken needs to be cooked to 160 degrees and carry-over cooked to 165 to get rid of traces of salmonella)
I would either use cooking spray if you are watching your fat levels and adding just salt and pepper.
That may not sound like a lot, but as long as you add a pinch to each side, I can guarantee you that it will taste better.
If you are on a gain, add about a table spoon after you are finished cooking the chicken. Don't add it before the cooking process as cooking olive oil turns it into a trans-fat (one of the most useful health-facts I have learned).
As far as cooking methods go, just barbeque or fry the outside until there is brown and finish it off in the oven.
