Caffeine from different sources and of different qualities will affect you differently. Just like how different forms of alcohol produce different feelings of being drunk. In my experience it sounds like you're drinking poor quality coffee and or not making it well. If never have before, find a good local coffee shop and drink their coffee. The difference might be surprising. Also red bull has taurine and other ingredients which provide energy that coffee does not.
