I've recently started using straps, just for deadlift, as my grip is failing before I should be, only my right hand seems to fail though (overhand grip). I was wondering would it be better to continue doing over-under grip with 1 strap on right or just go double overhand with 2 straps which feels awkward

Double overhand, the main reason you don't want underhand grip is because you run a pretty big risk of tearing your bicep.
So you're foregoing one of the biggest advantages of using straps.

The first option would be to get some chalk, or use hook grip, or preferably both, and stop doing mixed grip. That'll fix your problem.
If you're going use straps use double overhand. Just do some grip accessories with your weaker hand until it can catch up, if you still want to use mixed grip.

If you're doing hook grip properly, its just the same as straps but for pic related people.
Hook grip doesn't increase grip strength any more than straps do.
OP, use straps and do seperate grip training. Farmers walks, regular and reverse wrist curls and plate pinches.

If you can't grip it, you can't lift it (for reps.)
Straps are for 1rep PR attempts and nothing more.
Used mix grip mostly then. Use straps if your grip is really failing you.

Bicep tears are much more of a risk doing something like a continental or lifting a stone
Deadlifting, it isn't even close to a significant risk
