Mediterranean diet with most of the carbs in the morning
for the rest, it's pretty balanced
pretty low in meats and almost no red meats, but I up my broteins with greek yogurt, legumes, local bluefish
I don't like milk and butter too
Extravirgin olive oil is a helluva drug

I counted calories when I needed to cut

STEP 1) count the cals in the beginning, up to when you have a feel for what you need to eat to reach your TDEE
STEP 2) simply make sensible food choices most of the time while prioritizing protein
STEP 3) if a meal isn't "clean", at least try to keep it as sensible as possible
STEP 4) never overly restrict yourself this way while staying consistent

that's really important, i got an eating disorder from tracking obsessively for several months in a row but the first couple of weeks was so useful for me to just keep a vague mental tally of what is caloric and what isn't
