I don't know if any studies for sustained IF, but I imagine it's the same as any carb restriction or ketogenic diet. Your body adapts.

Maybe it never gets to 100% of what it was and it's sitting at 90% instead.

I think carb restricted (only carbs are few fruits and lots of veggies) any number of meals can work with 1 weekly fasting period is fine. You should adapt your body to be able to fast occasionally, but not be doing it every day.
