It's been months since I started prep cooking and I've got it down rather well.
What meat like products taste decently good after being frozen then reheated in a microwave. Also stay somewhat the same texture? I've been eating fish for moths, and it's still great, just looking for a change up.

Do not ever fucking reheat a purely meat based dish via microwave, unless you hate yourself.

Cold pork is usually fine. Cold slowcooker joints like shoulder can turn into a mess of lard pretty quick.

Any kind of stewed meat basicaly, I like beefstroganoff, pork stewed with tomatoes, garlic and basil, chicken breast stewed in sour cream and onions. Also perfect side for them is buckwheat and it has better macros than rice, tastes great when reheated too.

Chicken and pork should always be cooked through, beef and some kinds of fish are indeed better if undercooked or can even be eaten raw, but again, not chicken or pork.

You can get away with undercooked pork these days. The parasite issues that used to be associated with it are largely dealt with. Its still understandable if people don't want to take even the minute risk but it ain't the risk it used to be.
Raw chicken, on the other hand, still stands a pretty good chance of giving you real problems.

Seconding chicken thigh or any dark meat. That stuff has a high enough fat content that it retains its moisture regardless of how you cook it.
If you're worried about the fat content, bake it in the oven on a wire rack over a pan to catch the drippings.
