The medium load is one of his new programs. It's less accessible, though, and includes a lot of equipment like chains and boards.

The large load is one of his classic pre-app programs. It's more accessible, but you can see it doesn't include much variation when it comes to paused reps or ancillary exercises. These things would have to be customised.

I would go more 'traditional' programming away from comp and use Bulgarian as a peaking block. If you want to train five or six days a week check out GZCL.

Do the programs that don't require boards or chains

For the chains you can use resistance bands, or bench with pause halfway during the pressing phase. Same deal for the deadlift with chains.

For the boards you can use a (big enough) water bottle or towel beneath the shirt, use the pins in the rack, or just do a partial bench.

Many of the sets included are warmups.

As written in the programs. You will have specific days which will be "skill tests", where you will attempt new maxes. Some programs have these twice, in different blocks. If these skill tests are 1 month from your competition, you don't update your maxes in the spreadsheet.
If they are not close to your competition, you can choose to update your maxes in the spreadsheet.
At the end of the program you will have a tappering cycle for a competition. If you're not actually gonna compete, you can do a mock meet in your own gym instead where you attempt new maxes.
Alternatively, you can just do the first couple of weeks of the comp block, where you will do skill tests, find your new maxes and get a lighter week in, and just start a new program from the prep blocks again - instead of finishing the comp block.
This has two downsides, however:
1 - Your maxes in the skill tests won't be as high as in a competition or mock meet, because you haven't done a peaking cycle to prepare you for them.
2 - You may end up accumulating too much fatigue if you skip the peaking blocks. YMMV

You can also inflate your maxes. This is often done in the bench press.
But it's better for you to get some experience with the program first before messing with it. It's recommended that you run it once as is.

His 3-days programs are the "intermediate" ones. You'll see it's shorter than his advanced.

I appreciate your mindset but there is a negative feedback loop for all progress and actions. If you're going nuts and making progress, that's great, but also make sure you can do what it takes to stabilize and recover. If you're going to go nuts, take up meditation and learn Mindfulness. You could benefit from "sitting". Look into Everyday Zen if you're open to getting weird with yourself.

Dropping acid will help you get comfortable with getting weird. At least it did for me
