I run like 35-45 miles a week and always have to poop. Any ideas on what I should eat? Or how I should change my poop schedule?

I've gotten in the habit of downing a cup or two of coffee an hour before my run. That usually shakes out any poo that's already on its way.
Hasn't helped with my insane flatulence after my runs, however.

Poop before a run even if you don't have to and be diligent about it. Having the urge to slide one out during a run is absolutely terrible.
Eat less fibre = less poop mass
there is a medication called loperamide that you can buy OTC. It is an opiate so it constipates you. take 1 or 2 a couple of hours before running.

Marathon runner here, I had this problem too, I solved it by adjusting my fiber intake. Eat some fiber one bars, it should make toilet trips more predictable.
