I always wonder. How does an American routine work?

You guys do sets of 3x5 and that's good for you?
I mean unless you do like 12 exercices in one workout you won't reach an hour length session unless you get to pause for 2 mins after each set.

I've always done 3x15 or pyramids if I want to go heavy
