So I can get pic related really cheap from a friend for $40 in great condition but I dont like the yellow stitching/soles. What can I use to make it all black?

This. Use some thick, old school shoe polish.
If this doesn't work, you can buy extra sneaker colors. People use it to customize sneakers. It's basically a color that needs to rest and dry for 2 days. It will then be flexible like a rubber layer and not flake off. Buy that in black and color the stitching with it.
That being said, let it darken naturally. It will look way cooler.

that was about a year ago and the color still looks fine
