Never going to work for you, because most nicer denim comes in a standard length of 34", letting the buyer hem them to what they see fit. You would probably normally wear a 32" for proper length, giving you only a couple of inches to stack. Kanye, being the manlet he is at 5'7, wears a 34" when he needs a 27" or some shit, hence the massive amount of stacking he has. You'd have to find something at a 36" inseam to get such stacking in my opinion and only a handful of brands make them that long. Other Julius or some other specialty brand makes long or J shaped denim that would work for you.

6 inch leg opening if you got 9.5+ feet size on 100% cotton jeans.

5.5 inch if you got lil baby feet and the jeans are like 1-2% elastane.

idk what to do about your calves but thats essentially the goat leg opening size for everything.
