Laminate, or butcher block if its end grain.

It's also ~$25+ a linear foot (24" wide). Has anyone built their own before? It seems like you just need a planer, wood glue, and a lot of clamps.

That is exactly what you need. A drum sander makes everything much easier though.
I used to churn out butcher block with off cuts I got for free. I'd then slice and finish it as cutting boards that I made to size. It was fucking terrible.
