What is the absolute simplest way to send a simple signal from one circuit board to another wirelessly? Basically I'm trying to put a simple pressure sensor under my front door mat and hook it up to a light/alarm or something without using a bunch of wires. So what's the easiest way to send this singular signal?

The most simple way is to use a wire.

Make a clapper that is triggered by the pressure sensor and then use:

esp8266 - cost a couple of bucks plus you need a programming interface for another $4-5. wifi output
to keep things simple, various wireless gadgets can be repurposed: wireless doorbell, RC car, wireless window alarms, even an old wirelss phone if you have the space to hide it in.

A servo, Rolling dominos. and a switch.

most people don't step on the door mat when they knock/ring the bell
just sayin

Whoopie cushion under the mat and sensitive microphone
A ramp, bowling ball and some empty cans
A PIR motion sensor would probably be easier and less susceptible to weather damage. Probably wouldn't cost any more either.
One of those shitty garage door wireless remote relay thingos, $5 no micros no fucking around, tiny already built
I think a motion sensor and/or camera would serve you better. No false positives if you set it up right, and far fewer false negatives. I use an old smartphone for that kind of thing.

Pro Tip: No one will stand on your mat before actually coming inside unless you place it way further away from the door. Otherwise you would open the door to directly face your guest.
