It's easier to fake those signals than get a clean one.
You'd be working with microvolt to millivolt levels along with s shitton of noise. 99% of the work will be filtering.
Of the ones you listed, a basic 2 electrode ECG is fairly straightforward and will give good results.
EMGs require relatively expensive sensors and aren't terribly informative in terms of what's going on. Also lots and lots of noise.
Don't even bother with EEG.

Light based pulse & oximetry information is very simple.
There isn't much you can do on an art project budget while being non-invasive.

In addition to what >>1169696 said, you can measure skin conductivity ("lie detector"), detect breathing mechanically or from conductivity information and measure movement/limb positions with accelerometers.
ECG isn't that difficult to measure if you do it properly. EOG isn't necessarily difficult either, depending on your requirements.

To explain the project, the man is being suspended ( the kind of suspension with piercing in the back) and we need to make him go up and down using his brain waves and gather information about the state of his body to generate sound and projections

If you stick an array of electrodes down the central line to where the phrenic nerve is, you can measure diaphragm activity.
You can implant force sensors and strain gauges on joints and tendons to measure load and stress.

If we are talking about implanting electrodes and sensors, contact the neurological department of your local hospital/clinic or medical university. They know how to get hold of all the necessary equipment, how to implement it and operate it.
Inserting electrodes is a medical procedure, not something you can't/must do without proper training and knowledge.
