Would it be a safe assumption that you've read through whatever instructions the creator of the shield wrote, or am I being to optimistic here.
The USB connection will only provide power to the logic and maybe limit switches.
Your external power supply will run the motors.

Yes, if your PSU is 24V, make sure the 24V isn't going to the arduino VIN pin

Just connect it to the PSU assuming it's the same voltage as the fan, if not, get a step-down voltage converter

I haven't used arduino g-code interpreters, but from what I remember, you can put g-code on an sdcard and use that to load code on your shield. If you want to use Mach3 or something, you'll need different board.
