I got my hands on this old beat up drum, and I'm planning to renovate it. The leather drum heads need to be replaced but I obviously can't just use modern plastic heads. What could I use instead?

You can probably just buy an off the shelf set of like Remo fiberskyns or something unless it's some wacky off-size head.

I can't tell from the photo but that looks like most snare heads still look. It's basically just two metal rings that you tighten down with the long bolts along the side.
Pic is the kind I have. Only thing I'd worry about is the wood being dry rotted or something and it collapsing when you tighten it.
