If you can figure out what processor is in it you might be able to. You'll need some way to flash it (i.e. jtag).

I see this is old, but just want to throw this out there seeing as I have one. It's a custom OS, probably Android based, and while the device has everything needed to be a tablet hardware-wise, the OS has this terrible, terrible immutable alarm when it does not have 120v in(or 24v after transformer, bit you get the point.)
