The jacket I wanted to use as a motorcycle rain jacket has arrived.
A quality good, and seemingly ideal, other than the hood. I could send it back, but I'd like to first see if I can manage something with the hood first, since I like the jacket.
Tried wearing it under the helmet - makes it quite hot quickly, and restricts my ability to hear & turn my head fully.
Tried wearing it tucked inside the jacket, but this was actually difficult to do, and didn't seem like it would stay.
I suppose a temporary option is best - I'm sure if something works on a hoody, etc, it would probably work here.

Anybody have suggestions on how I can get the hood to stay either rolled down, tucked away, etc ?

Can you just safety pin it to the back? Like 3 pins would do.. But this would poke holes in the whole thing.

I suppose that's possible, was really hoping for something that would not damage it. Or If I AM goiing to damage it, being able to easily undo and redo it would be ideal, on the off chance I decide it's in my benefit to wear a hood. (Like perhaps a button on the back of the hood and the back of the jacket. )

Tape it down when you fold it inside, maybe that'll work.

You could find a local seamstress or leather worker. Have them cut the entire hood off at the seam, rerun the main zipper, run a new zipper or set of buttons around the collar, and probably a set of buttons up the front of the hood. Then you have a nice jacket with a closable detachable hood.
Some strong Velcro tape maybe?

How much do you really need to ride in the rain? If you're cheap, just get those cheap rain jacket/suits. They work decent and you won't care if they tear, or burn on your pipes. If you want something better, then get an actual motorcycle rain jacket/pants/suit. You don't need a high end one if you aren't traversing the country, rain or shine. And they'll be purpose-built for forr motorcycling, ie: the designed for riding position, over jacket, room for gloves, etc...
