So I wanna build a new bedframe because I'm starting to see this girl and I want her to be impressed that I can make a bed. What's an easy and interesting thing I can do to make my bed that currently just sits on the floor more interesting.
I kicked around the idea of a platform bed or a floating bed, but I really don't want to hurt my shins all the time and I love having my bed really low to the ground.

Just buy a bed and tell her you made it.
Otherwise you'll have to wait x amount of weeks until you can impress her by actually building the thing, and getting right.
If you just buy one you can impress her with it tomorrow.

I have yet to find a girl that's impressed by woodworking skills. I did meet one that was into my bladesmithing though.
Girls are impressed by confidence more often then they are by the product. Explain your design, show how you stuck to it, and stand there beaming with unearned pride. She'll eat it up, regardless of how good said design actually is.

They should call them hair-pinterest legs. I don't like them at all. If you can't make legs then the rest of your project is probably crap too.

If it's your first time building something, don't build a floating bed. Stick with a simple design, and sand/finish the fuck out of it.
Build a low platform bed, maybe 4 to 6 inches tall, and just buy the interior supports from IKEA if needed. If you want to make a headboard, be prepared to spend some dough on quality wood, or go cheaper and get a veneer on whatever you make.
