I think it's just because song writers happen to like using him to wistfully reminisce back to a rose tinted, bygone era of modern mythology of which he was born from, that everyone collectively remembers at least through some second-hand exposure, and shared a collective memory of childlike wonder through. Humanizing such a larger-than-life pop culture powerhouse just works for feelsy musical aesthetics, kind of like how (I assume) country singers try relating to Jesus or some shit.

Except none of the songs are rose tinted, they're all about how much Superman's life sucks because he tries to be a superhero. Which is why most of them match The Sentry more than Superman.

Superman is a pillar of strength and idealism, he doesn't have the doubt and weakness of someone like Peter Parker or even The Man of Sorrows.
