They are completely and absolutely different. Ghost in the Shell anime aren't really 'adaptations' the way you would traditionally understand them. They adapt the concept, the world, the characters - but not the story.
Quoting the manga author, Masamune Shirow:

Creators of GitS don't want to tell the same story over and over, they want to tell a story best suited to the artform this installment of the franchise is in.
It's kinda like asking what is better - Captain America movies or comics? The answer would be, they have similarities but are completely different.

So I recommend checking out both. The original comic is pretty great, so is the sequel 1.5 Human Error Processor - just stay away from 2.0 Man Machine Interface, plot is hard to comprehend (idk if it's a result of bad writing or botched translation by Dark Horse).
From anime, watch the first two movies, and the anime Stand Alone Complex series, they're also pretty great.

You can freely ignore Arise anime, Arise comic and The New Movie (which is set in Arise continuity) - it's okay, but won't blow you out of the water.

Definitely ignore the live action movie with ScarJo, it's trash.

I think the manga is good for what it is and you can see where the movies and SAC pulled a lot of their reference material. But manga Major is hard to deal with when you're used to the more serious portrayals in the rest of the franchise.

I just want an unflipped version of the original manga with the scenes in there. How hard is it for a publisher to do that? All the other Shirow stuff I have is uncensored and unflipped.

The garbage man scene is a great example of this. They had no idea what made these scenes work to begin with and just cynically throes them in to appease fans.

I'm actually in the process of watching SAC for the first time right now, and while it's pretty good I'm having a hard time seeing what the huge deal is. With the 1995 movie I totally get it - it's dripping with aesthetics and atmosphere, and manages to hit on a lot of themes with exceptional skill. However the anime just feels a lot more toned down and generic. I'm only on episode 7 right now, but does it get better later on?

SAC's whole premise is "The glory days of Section 9 before Motoko becomes clinically depressed," so it's not as moody and atmospheric. It's more of a police procedural, but once the Laughing Man story kicks in, it's great. I know some people have problems with the stand alone episodes, but I love the worldbuiding.

I like to believe this ad from a magazine was the sole reason I ever had any interest in finding out about Ghost in the Shell.

There completely different telling totally different stories. I recommend both the manga, first movie, the TV series (SAC & 2ND GIG). Other than those i don't recommend the other installments in the series.

I think SSS is the weakest of SAC, though it's grown on me after I've watched it a couple times. I do prefer the Major's outfit in it to any of her others in SAC, though.

All three are good, to the point that GitS is my go-to example for illustrating the concept of a triple crown (the rare case of an IP that has good entries in three different mediums).

The comic is the closest to classic 80's cyberpunk. Expect guns, violence, titties, and a world where the only difference between a terrorist and a government agent is who writes their paycheck.

The Oshii movies lean into the Noir/Existentialist/Buddhist elements of cyberpunk. Sparse periods of intense action punctuate dialog and visuals reminiscent of Burroughs' cut-up technique, where old quotes/imagery are rearranged to form entirely different meanings.

The anime is possibly the defining work of postcyberpunk, where the "punk" elements have mellowed due to a world where technology hasn't fundamentally changed human society and results tend to matter more than ideology.

Dude, don't be silly. GitS is one of the few franchises beloved by pretty much all of /a/.

Anyway, watch the first movie and then the Stand Alone Complex series. These are the best entries in the franchise, IMO. Be aware that no continuity it really shared between them - the various GitS adaptations are really different takes on the same concept, with the same characters, but different circumstances and specific stories.

Don't watch the SJo movie.

SAC sucks. It's not faithful to the comics at all. The characters are too flat and stern. None of them have the sense of realistic humor that the comic versions have. Hell, the Tachikomas feel out of place, even though their depiction is faithful, because the rest of the show is so serious. It's painfully obvious that it wasn't done by the original creator.
