Usually because any villain of supposedly decent credit will have other means to obtaining cash.
Or maybe it's because authors feel it's more interesting to have them steal actually stuff to either resell or to work as macguffins in their plot.

maybe the mandarin could have gotten cash out of his "a terrorist and a world leader in my hands" plan but other than him and the Vulture all the MCU villains were after stuff bigger than life.
Homecoming was really engaging because the villain even with his big bad armor was still street level and thus very relatable.

Because now that's what desperately poor shmucks do. Even regular villains will no longer debase themselves with simple robbery. Supervillainy requires something more grand.

Modern banks typically l have less than $7,000 cash in them at any given time. That's calculated based on the amount of cash withdrawals they go through on any given day.
At the end of the night they send any extra out to a major repository by truck, and if they're short they get more cash by truck in the morning.
tldr; banks literally do not have cash to rob anymore. That's why they ask you give them advance notice if you're withdrawing more than about $1,000.
Robbing safety deposit boxes can be really lucrative, but that doesn't have the same visual appeal of "bags of cash" for comics.
Basically, Banks restructured how they handle money so that they just don't have a lot onhand to lose.

Because companies and authors are constantly trying to one-up each other. Always rising the stakes.
Which is completely expected, amd positive in a way, since it pushes for new and ingenious ways to develop a plot.
At some point it does get tiring, though. You can only get so many world-ending stories in a row before you're sick of them and just want a good old-fashioned villain robbing a bank situation.

Maybe for smaller, personal banking. Commercial banks can have a lot of cash on hand, as can regular bank branches if they deal with business accounts. My local bank has about ten businesses that drop their deposits with them.
