Does this mean that vampire brain in AT has a set taste perception for every colour and if vampire eyes register something as red, the brain sends a signal to the tastebuds to perceive it in a set way? And if so, does this mean that if Marceline went blind, she wouldn't be able to drink colour anymore, just blood?

Colors do exist beyond on our perception. It's just that we've discovered them and applied a name for them. The color red is the color with the longest wavelength that's visible to humans. There is an actual range in nano meters for what perceive as red. She can feed herself regardless if she could see the color red. That wouldn't make sense otherwise assuming that it's more likely object reflecting most light within the red range. This is of course assuming that eating a color makes any medical sense to begin with. It's difficult to apply real world explanations for situations in a universe where a heterotroph can sustains themselves with light. That's biologically impossible.

It might've made sense if she had a drastically different anatomy from humans, including eye organization. She does turn into a bat, but IIRC vampire bats can see colors too?
