You could start with some of the one offs like America or the Dredd and Batman Collection.

But I'd just go ahead and get the Complete Case Files. Then you can get into it proper. Depends on whether you can stomach the really old stuff. Otherwise start with number 5, it has Judge Death, Bloc MAnia and the Apocalypse War which are all classics.
There are a couple of good torrents around if you are unsure whether you wanna drop the money.

I liked the early strips when Dredd was slender, of ambiguous race and faintly camp.

I actually like the slim Dredd more too, he seems more lethal and quick, but the full on roided-out Chin fits Dredd as an institution better.
