Well, it really depends on who's writing, but in theory Banner's Hulk is a reflection of his own repressed rage, while Jen's She-Hulk is her idealized, sensational beauty that she desperately wants to be.
You could make the argument that they're both what the transformee truly wants to become: Banner wants to cut loose and lash out and smash things. Jen wants to be strong and sexy and secure in her self image.
This doesn't exactly hold water though, since there's other Gamma mutants that don't quite fit this and Jen can go "full-Hulk".

I wouldn't say "super-organism" is the case for every girl that hulks out, in fact I can only think of the Ultimate She-Hulk as an example of that. But yes other Hulk transformations seem less strained than those of Bruce Banner. And I think it's pretty obviously the anger and rage that are the catalyst for his change as opposed to any other. That and the loss of Identity. Bruce during a transformation is fighting against it in an attempt to maintain what he knows to be himself. And on the other side, the Hulk is fighting to gain freedom and entrance into the world. This dynamic isn't present in any other Hulk and a few have expressed a feeling of untold power that comes over them in Hulk form as compared to others. But that's why the changes are different for Bruce when compared to almost anyone else.

I remember seeing something like that in a fucked up movie from my early teens.
It was a pretty low-budget foreign film that was poorly dubbed in English. It was about some people trapped on a scientist's research ship with some weird deep-sea creatures that were contagious to humans. One guy got infected but it isn't revealed until later on.
He was one of the few who could control his form and shape-shift at will into a horrifying eldritch creature, but he becomes a straight up villain after getting this power because he was the designated 'asshole' character from the beginning.
