The "eat poop, vomit, wring hands together" flies don't actually live for a few days, but instead can have lifespans of up to 5-6 months.
The flies you're thinking of are called mayflies/damselflies and they usually live anywhere from 24-72 hours and only enter into their final, adult stage of development to breath.
The two qualities that seperate these organisms are:
-Flies can eat. Insects that live for a few days don't even bother developing mouths or digestive systems- they store everything they have from being a worm and just burn through it as an adult. Some butterflies do this in fact.
-Flies are constant. Insects that will only be around for a few days usually time and organize their day-length lives very carefully so as to all become adults at the same time in large swarms so they can breed and die as quickly and efficiently as possible.
