I wonder if it was really all that much of an R or if it was like Galaxy Quest where the differences are so negligible that the "R rated" version that was filmed is very overblown especially in comparison to a much edgier script.

You can say shit as many times as you like and get a PG-13 rating. It's fuck that gets you an R rating depending on how many times you use it. The movie The King's Speech was completely PG, but because there was a scene where Colin Firth says fuck a few times, it immediately got stamped with an R rating.
