They get to where they are by compromising and making something that a lot of people will find inoffensive and that will be what a "good steak" or a "good pasta" is to them. This is especially true if they don't cook much themselves or don't know the basics.

Heat up your cast iron where it's smoking a little bit from the sides, then put on steak. Sear that sucker, let cook for the appropriate time, flip, sear, then pull. Let rest. Or alternatively, put into cooler pan to cook a bit more through.
