How come when they lost Dory, they didn't just get started making another one? It's established in the first movie that they're still fish who breed like fish and should have over a hundred kids no problem.

Her parents waiting there for her all of that time cheapened the movie significantly. Her never finding her parents, but coming to terms with that, would have been a much more potent movie.
But, you know, Finding Dory was a pretty forgettable movie. There's a reason people stopped talking about it so quickly.

Possibly they did, and their other children weren't brain damaged so they could grow up and be on their own without them worrying.
They just held out for their one lost lamb because they were amazingly loving and patient.

Probably worried that all others would end up equally braindamaged. It doesn't happen often but some couples kind of blame their own genetics when they have kids with a disability, and such they stop trying to have more in fear of just birthing more people who may not survive on their own. Yes these are fish but they are "humanized" fish.
