Why did later seasons of the show get so extreme with violence by comparison? Most episodes would have at least one incredibly brutal, bloody sequence.

For Family Guy, I always thought Nu-Family Guy as a Rocko's Modern Life/Wacky Deli situtation. Seth made is his more gross, violent, and sexual hoping that Fox will take it off the air so he can move on to other things. But Fox loves it and demands more.

This scene was depicting the comedy in how many bullets the guy could take, stumbling down the street the whole time like some comedic dance, screaming the whole time. It's funny because of how drawn out the scene is, along with how he just keeps moving with the car the entire shot. It's violent, but absurd.
Nu-Family guy would have just had him get shot, a bunch of goons walking up to his gasping collapsed form, then just kept shooting at him with deadpan expressions until he was a pile of red goo, with a huge amount of graphic detail forced in.

On a related note I've been watching a lot of American Dad lately and you guys are complete hypocrites about the "gore" and violence in that.
They even literally had a rotting whale carcass like FG except shown with a lot more detail. And then there's that episode where Principal Lewis' prison wife keeps shanking people.

The first season was genuinely funny, but now it seems like the show just thrives on being nothing but offensive imagry and dialogue. The characters have all become unlikable parodies of themselves. It's just pathetic really. If I had a kid I would do everything in my power to keep this show away from them.
The point where Peter lost his eyebrows was the point that the show was starting to go to shit anytime soon

I'd say a big part of it is that while both often use shock humor, AD builds off what they present. Like, in the this scene, Stan actually has a reason to show Brett that rotting whale, and when they use it for a joke, it's a quick ridiculous joke that fits Stan's almost naive character. The same thing sorta validates Lewis' prison bitch because it's part of the episode's plot and the humor they try to make is built off of it. It's not as much that AD doesn't use non-sequitors and shock humor, but what they do is all within consistency for the characters and the show. Any crass shite that happens in AD is a prop, while in FG, it's the entire "joke."

Not always. The infamous Stevie/Brian babies had jokes beyond just the shock value of the creepy half-species offspring.
