Princess Star Butterfly falls in love with her best friend. AndhisnameisMarcoDiaz.

That's an awfully watered down way of putting both points. Your stance completely ignores the fact that Marco doesn't know what he wants half the time and that Star not getting what she wants is done within varying contexts. Sometimes she works hard to achieve what she wants, sometimes it curveballs into something better, sometimes it's just plain old lesson learned. You can't argue Starco shouldn't happen based on something so volatile.

You don't have to support Starco if you don't care to and that's fine, but you shouldn't have to skew the important details of the show just to fit that.

Bait aside, Star is Marco's best friend in the universe. Their friendship is very sweet and deep, they compliment each other well, and they've managed to keep supporting and pushing each other onward through some pretty rough times.
Marco and Jackie aren't there yet, not really even close, and they might never get there. There are plenty of people who go the distance and marry someone who isn't their best friend, and they can be happy and healthy in that relationship, but it always could have been more.

Then Moon gets the shit beat out of her in the full episode and comes to take Star off Earth, like, in the middle. Maybe actually giving her more detail about what the hell's going on. Then the end scene with Star leaving Earth happens like normal.

Kind of a shit rewrite but I don't know how else to handle it. Don't want to make stuff unrelated to Star the entire focus of the episode or spoil the next season by saying what Moon plans to do with Star on Mewni, but that party stuff is too mundane next to the Toffee stuff even though that's the point.

I'm all for accepting that the show might go in a direction I don't want it to. Star might have to learn a valuable lesson about staying just friends. Even though I can't pinpoint what that lesson would even teach her at the moment. Besides "The show is about her not getting her way most of the time, why should she now?"
But a couple of points before I'll accept it.
One: If I'm never going to get Starco, Jackie had damn well better become a better character than "Mrs.PerfectForMarco".
That's all she is right now. And I can't stand the thought of Star not getting into a relationship she wants simply because there's already a token "Mrs.PerfectForMarco" character. That's kind of shit writing and gives me a "just because" feel.

Two: The show makes a convincing argument for Marco not returning Star's feelings.
If it's because of what Star told Marco after BMB then I call bullshit as well.
I can accept that Marco's been putting aside his feelings for Star in order to to be a better friend for her. But it's clear he's willing to go through monumental obstacles for her and still feels something very strong for her. No way in hell you'll convince me there isn't love in there.

Well it IS pretty taboo for someone to have a crush on their roommate especially in a foreign exchange type of situation. It's just not a good look for the parents since a crush would mean that Star would not be able to live under the same roof with Marco without it being awkward. The buildup was slow and started even before season 2.
For example, in this moment Star started to see Marco in a new light: it's true she didn't know who he were at first, but she was nevertheless actracted by him.
If anything the fact that she didn't know who he was and yet, even without preconceptions she was so much under his spell, is a further proof that Marco could potentially be liked romantically by Star.

He THOUGHT he wanted to be the guy who would get to know Jackie for who she really is and have a real relationship with her rather than just put her on a pedestal. But in all her appearances post-Sleepover he's not only made zero progress in regards to actually getting to know her, he's also made zero effort.
