What are the best stories out there about young heroes in training?
I'm not looking for teenage hero team stories, but more for that troubled kid/wise mentor vibe.

New Super-Man isn't quite what you're looking for, but there is a coming of age thread woven deep.

Boku no Hero Academia
Sentinel by McKeever
Blue Beetle III's first series. It starts with a newbie being trained by a grizzled old mentor and follows him until he becomes a legit hero.

Morrison's Batman and Robin run was great.
Just know that Robin (Damian) is starting out having been trained by some of the greatest assassins in the world, but this is about Dick teaching him how to be a real hero and not just a violent kid.
You also get to see Dick come into his own, having been Robin and Nightwing and trying to fill in his own mentor's shoes.
