Because writers are really scared of letting the status quo go with Spider-Man. It's a problem with the format now that most of the fans are adults who expect long form storylines but who also can't handle too much change.

I really hated how they retconned Aunt May's death in ASM400. Despite being in the middle of the Clone Saga it was really touching and well done. It felt like the perfect closure to Peter's relationship with May.
