It's possible, Aku's not a robot and he uses them as minions so maybe in Jack's universe he's set the standard for other demons to employ them as cheap labor over humans or lesser demons.
After all a robot, depending on the degree of its programming, is not as likely to flee or get any ideas in the event of the tables turning.

I assume they're busy with the big evil villains of their own realms (Apep for Ra, Kali for Vishnu, Loki for Odin) so they picked a mortal to do battle with Aku in the mortal plane on their behalf.

I always assumed that if Jack were to fail to defeat Aku (which he probably won't because of destiny) then the gods would either choose a new champion or declare the mortal plane a lost cause and stick to their realms.
