Honestly there's little excuse for this, people say Finn is older and PB is younger there but I'm pretty sure both are wrong, but the point is that AT doesn't fuck these things up that much. They have their shit off model moments (like Finn in Up a Tree) but usually they are consistent while STILL letting the artists put their own unique touches on the characters, something SU is failing at doing pretty badly.

I really wish they let Finn physically grow, would be very rewarding. They don't even have the cheap excuse of him being locked in an 8 year old body like Steven does.

They do but they don't actually bother to show Finn as being physically matured. Usually he's still drawn around as short as when he was 12, sometimes just a bit taller and that's about it. I remember one episode where he went from being 12 year old size to as tall as Bubblegum, so they have their art inconsistencies too. Sometimes they do draw him as taller, but I've found it to be the exception and not the rule.

He has aged but the show hasn't drawn him to reflect that the majority of the time. At least he's not actively shrinking like Steven.
