he's shrinking the space between atoms which implies he's also reducing the orbital distance of their electron shells, which are by far the largest element of an atom (though they are of course empty space, so this is fine as long as you don't into physics too hard)

going subatomic is also fine by that definition because he's only shrinking his own atoms, not all atoms (which is shown by the need for a suit that deploys the particles)

essentially as he shrinks he becomes denser but retains his strength, vastly increasing his power/weight ratio

growing is also managed the same way, by increasing the electron orbits but presumably the Pym particles act as a bridging medium, supplying some means of preventing the atoms from flying apart as their electrons move out of range of their nuclei and they lose charge (or from turning him into radioactive crap), so in effect he's increasing his mass artificially using quantums

more mass=more weight, but he can clearly still move so he's stronger; at big giant grow size his power/weight ratio is probably identical to what it is when he's is what are normal sizes, but because he's much bigger he's concomitantly more stronger
