Aku had a premonition about Jack getting the crystal and using it to go back in time and destroy him. And Aku is an ancient demon who has the appropriate amount of respect for premonitions like that. Do you know how many stories end with the villain being defeated specifically because they did what made sense at the time instead of making sure to keep a premonition or prophesy from happening? If he tried letting Jack die in the quicksand or killing him in his sleep then Jack might've survived and he would've lost his chance to destroy the jewel and the premonition would've come true. His approach to solving that problem worked perfectly, he stayed in character and didn't try pulling any tricks until the very end when he needed some of his powers to beat the giant and steal his jewel, and even then, he just played it off as Ikra happening to possess the powers of flight and size manipulation.
