Everything relevant that happened in the war was either under Sozin (the airbender genocide and the conquest of the colonies) or Ozai (Everything that happened during the show)

Azulon was pretty much just filler so Aang could be in the iceberg for a nice round number of a hundred years.

Because the comics need the established marketable characters in order to sell. Hence why Aang is shoved in all of the covers even when he isn't in some of the comics.
