Hellboy is always a good pick.
Moebius' work has some of the best art on offer.
Understanding Comics is a must read, but i'd recommend it once you've already read some other comics, as it really helps to be able to recognize what he's discussing.

It was pretty eh depending on what era of comics you like. It was written around the time when Allan Moore was ranting about how cape comics should be deep and emotional and edgy. Then that got popular, Allan Moore, being the hipster he is, then started to rant about how capes should be goofy and fun. Then that got popular, so Alan Moore started to bitch about how capes shouldn't exist and how people who enjoy capes are scum.

All of them. Its all great.

Though start with Seed of Destruction, its the weakest as it was written by someone else and Mignola was finding his feet but it's still great, then read the main series in the order the volumes come. The other Spin-Offs are good, but Mignola's abscence from both art and writing means they dont reach Hellboy's heights.
