Old Man Logan implies that the healing factor is something that can deteriorate over time, so there might be some sort of leeway when it comes to intoxication. Maybe Logan drinks so much that it literally kills him, causing his healing factor to regenerate. When it is regenerating he is vulnerable and gets intoxicated.
Or maybe the writers are just hacks.

The alcohol builds up in his system over time. He can get to a tipping point where the alcohol can overwhelm the healing factor (the same way whenever a villain tranqs him it's always explained away as being enough to kill a herd of elephants or whatever) but marvel has a policy about depicting hard liqueur in certain tittles. Showing Logan drunk on anything less than a mountain of empty beer bottles and cans is a copout.
