I've noticed a cultural shift in the modern era where now everybody hates farting in cartoons, and I must admit, I kind of got caught up in the crowd and hate it too now....but why? When did this change? It used to be an accepted form of comedy that everybody loved but these days we all hate it

I don't know how much of a "cultural shift" it's been. I feel it's been this way for a while now.
Fart jokes are just overdone and not that funny.
The only time I've ever laughed at a fart joke was George Carlin's routine (which was partially making fun of how stupid fart jokes were) and The Tale of Abu Hasan and the Fart from 1001 Arabian nights (an ancient fart joke that has lasted for millennia). Outside of that, it's hard to make these jokes funny anymore.

It went from "character farts because he was scared shitless/squeezed too hard/whatever" to "Dude *fart* I got *fart* the power *fart* to fart *fart* superbad *fart*" and all the jokes depended on the characters' bowel movements. Heck, there was even an episode of Sanjay and Craig whose whole premise was that one character got a fart stuck in his asshole.

I think the first time it became noticeably shit was in the Nutty Professor movies where not only were there dedicated fart jokes but entire fart scenes.
I'm probably wrong, but this is where I started noticing people actually criticizing or parodying the usage of fart jokes
