Why are so many comics just this now? At least Schultz created characters to explore his complicated feelings.

Pleas for attention, like "depression" are the hip thing to do nowadays. The artists are literally doing it for (you)s.
It's too hard to make a cast of other characters who are both fully realized people in their own right while each also being a foil that represents a facet of the protagonist.

Yeah - I was hired to do comics like these for a company's social media and they would not let me break from this formula. It sucked.

Realistically though only elderly people enjoy them unironically and then there's just morons desperate for more "FUCK TRUMP" material
It's an easy, short, and self-contained format and style that works well for spreading across different social media. It also works under the assumption that people have a short attention span and can't be arsed to spend more than two seconds reading something with more depth.
