There's a comic that explains that Zuko's a much better swordsman than Sokka. Sokka started out athletic and with decent fighting knowledge, and only needed to learn the basics of swordsmanship for his purposes. He was never going to be the one to fight bending masters, he just needed to be good enough to fend off mooks.

I don't really watch Steven Universe, so this pretty much all conjecture. As I understand it, gems only really have one weak point, and when you couple that with their healing and resistance to energy, they probably lack defensively compared to fleshier humans.

I also think humans had more development in their swordsmanship. Sure the gems have been alive for thousands of years, but did they really do much fighting barring one incident 5000 years ago? Monsters don't really swordfight you back. Meanwhile, humans fought all the time practically.

Connie should be even worse, since she's just a normal kid and is learning to not protect her heart/head/neck/etc. since her gem isn't there.

Zuko's battle with Azula wasn't just a physical one; it carried all the physiological and family issues they've had for years (I don't have time to word this better). Having Zuko not be the one to defeat her just felt wrong. They could at least made him get back up near end, maybe have Azula about to cast lightning at Katara and then Zuko attacks her at the last moment. The Katara could have done what happened in the show and trapped her using the water.
