Because the Flash has about two or three speed scenes an episode, slowing it down for a minute while we see everything would get old fast, that said portraying the fights as weird races where they occasionally stop to punch each other is pretty dumb.

When the Flash movie comes around, I want them to sped up fighting where you can make out whats going on, but have everything in the background in slow motion.

That gimmick was already done in the move The One.
It looked so so. The thing about super speed fighting is that it shouldn't look like normal fighting even if you slow it down. A super speed step is fast and strong enough to move you across a room, so having someone walk in slow motion and call it superspeed feels off and makes the thing look weightless.
